The most popular cake in Italy is the Tiramisu, a light mascarpone cream with ladyfinger biscuits, coffee and cocoa, that is served cold. The authentic recipe is easy to prepare and requires low cost ingredients; here all the steps to cook it shown by Giancarlo Perbellini, Italian two Michelin stars chef. First step is to boil 70 ml of water with 200 g of sugar, in parallel you can prepare the mascarpone cream breaking 3 whole eggs and 3 yolks in a whipping machine bowl. When the sweetened water reaches 121° C, you can pour it in the bowl to cook to pasteurize the eggs. Afterward merge 500 g of mascarpone with the whipped eggs and stir all together. To conclude you can alternate a layer of ladyfingers biscuits soaked in the coffee and a layer of mascarpone cream and garnish with some cocoa or chocolate above. Then leave the dessert in the fridge to serve it cold.
